Hyssop Blue

Hyssop Blue is a decorative and medicinal herb cultivated primarily for its spikes of intense violet-blue flowers and the complex, aromatic profile of its narrow leaves. This potent flavour, which is slightly bitter with strong notes of mint, anise, and camphor, is released instantly when the foliage is brushed against or crushed. It is traditionally used to aid digestion and soothe coughs in herbal syrups, as well as being a pungent seasoning for fatty meats, game dishes, and bean soups where its intensity cuts through richness.

This plant is typically grown as a hardy, upright semi-evergreen shrub that forms a neat, bushy mound, often utilized as a low formal hedge in potagers. It is robust and cold-tolerant, capable of withstanding winter weather provided the soil does not become waterlogged. For the best results and the most prolific flowering display, plant it in a location with full sun. It is highly drought-tolerant once established and thrives in light, chalky, or free-draining soil, as it will decline rapidly if grown in heavy, damp ground.
