Savory Winter

Winter Savory is a potent culinary herb cultivated almost exclusively for the intense, peppery bite found in its stiff, narrow leaves. This strong, spicy flavour, which is sharper and more enduring than that of its annual cousin Summer Savory, is released when the leaves are chopped or cooked. It is traditionally used as a classic seasoning for beans, pulses, and fatty meats, as it is believed to aid digestion and cut through heavy, rich flavours.

This plant is typically grown as a hardy, semi-evergreen dwarf shrub that forms a neat, woody mound. It is robust and cold-tolerant, maintaining its foliage year-round in milder climates. For the best results and strongest essential oils, plant it in a location with full sun. It is drought-tolerant and must have poor, well-drained soil, as it thrives in dry conditions and will suffer if the roots are kept consistently moist or waterlogged.
